Veronica Skaradzinski joined UHS in 2022 and is excited to follow her passion of food and nutrition with the team of dietitians at UHS that use an anti-diet approach to nutrition.

She enjoys working on a college campus where she can empower students to build confidence in their choices, flexibility with goals, and knowledge of nutrition. Veronica spends one day a week at UHS and the rest of her time with Recreation & Wellbeing where she offers group classes in the Wolf Teaching Kitchen and collaborates with partners across campus to build a culture of health accessible to all students.

Veronica has a versatile professional background that started as a retail dietitian in a grocery store where she offered many services including group classes, health screenings, and managing the on-site garden. She worked for several years with the SNAP-Education program throughout six counties in northern Illinois. In this role, she focused on evidence-based systems approaches and community collaboration with the goal of achieving nutrition security for communities in need. Veronica’s previous clinical experience includes working as an outpatient dietitian for cardiac rehab and general nutrition for adult populations.

In her free time, she loves to play volleyball, hike, bike, and travel.
